Let me just start off saying that I don't think I will make breakfast in the crock pot anymore.
Why?
Because I can't sleep because it smells SOOO good!! I kept waking up last night, breathing in that heavenly scent, wanting to just go and eat it right then.

Ingredients:
16 ounces hash browns, frozen
1/2 lb bacon, cooked and crumbled
1/2 medium onion, diced
1/2 medium bell pepper, diced
3/4 cup cheddar cheese, shredded
6 eggs
1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Place a layer of frozen hash browns on the bottom of the crock pot, followed by a layer of bacon, then onions, bell pepper and cheese.
2. Repeat the layering process two more times, ending with a layer of cheese.
3. Beat the eggs, milk, salt and pepper together.
4. Pour over the crock pot mixture.
5. Cover and cook on low 8-10 hours.
It was really quite simple. Cook the bacon, cut up a few vegetables, throw it in.
Overall, I thought the recipe was good. I accidentally went a little heavy on the salt, so I didn't eat too much of it, but still thought it was good. My husband LOVED it.
Next time, I'll add sausage to the mix, to give it a little more meat and sustenance. I will also omit the bell peppers, as I am not a fan of cooked bell peppers. Other than that, it was pretty good!
